Quark or Curd cheese is a fresh and delicate cows milk cheese of European origin with a smooth consistency, made in a traditional, old-fashioned way.

It is soft, white and un-aged cheese. It is not the same thing as cream cheese or cottage cheese. It is totally natural, made from unhomogenized milk with no salt, preservatives or rennet added.

Quark is one of the most nutritious and easily digested foods. It contains as many valuable proteins as meat, a number of vitamins and minerals and is relatively low in fat. It is full of omega-3 fatty acids, healthy saturated fats and sulphur-containing proteins.

For these reasons it is an important diet component of vegetarians, children and elderly people. It can be used in the diet of people with some medical problems, as it contains an important amino acid Methionine. It has been recommended as a meat replacement in cases of digestive disorders and liver problems.

Quark is versatile and can be used as:

• A quick snack - spread on toasted rye bread (Sprinkled with salt and  finely chopped spring onion);
• A base for a variety of spreads (in combination with fruit and vegetables);
• Baked and fresh cakes;
• Pancakes or pastry filling;
• In recipes where ricotta cheese is used (as an alternative) and more.
