Giuliano Tartufi Summer Truffle Slices 50g
Natural summer truffle, immersed in a saline solution.
The summer truffle (tartufo estivo) is the most common truffle found across Europe, mainly in Italy. The flavour is nutty-tasting with a more subtle aroma than other well known varieties of truffle.
It is recommended for risotto, tagliatelle and tagliolini. Add those slices to any meat, seafood or pasta dish as a finishing element or infused into sauces to add depth - try also paired with strong cheeses. The preserving liquid inside the jar can also be used as a dressing.
The whole Summer Truffle (Tuber Aestivum) is near black on the surface with a pale grey flesh and white marbling that does not change color when exposed to air. Rich in the unmistakable truffle aroma, whole black summer truffle is a great compliment to any dish you serve them with.
The summer truffle is best when used in the simplest way, sliced fresh in a salad, sprinkled with olive oil and coarse salt. It is better to avoid heating it too much so it keeps the most of its aroma. The lightly salted truffles make a great appetizer with hard cheese on crust toast as well as a delightful addition to several dishes like fish, meat, pasta or polenta.
Preservation: keep in a cool and dry place away from light and heat. After opening keep in refrigerator and use within 2 days.
Try the following recipe: Take half content from jar and grind it as subtle as possible and leave the other truffle aside. Put the grinded truffle in a saucepan above a boiling water container together with some butter (about the truffle’s same weight) or extra virgin olive oil. Add a stock cube (cube de bouillon) if you like, ½ cube for 100 gr of truffle and some salt. Melt at Bain-Marie for 10/15 minutes. Finally, give flavour to pasta with this truffle–sauce and garnish with thin truffle slices (to slice the truffle use a truffle-slicer or a peeler).
