Russian Spicy Carrot Korean Style Salad.
Russian “Korean” salad" or “Korean carrots” is a marinated salad with fresh carrot as the main ingredient. The dressing is a simple vinaigrette spiked with the mandatory fresh garlic, coriander seeds, and cayenne pepper.
This “Korean” carrot salad is found all over the the former Soviet Union. This dish is often called “Korean salad” but it really has nothing to do with Korean cuisine. The salad is more Russian than Korean and was born in the former Soviet Union.
This dish is popular among the Soviet Koreans: the descendants of North Koreans that moved to Russia before the Revolution of 1917 and were later deported from the Far East to the Central Asia.
The main ingredients are carrots, sugar, salt, vinegar, vegetable (sunflower) oil and ground red pepper. The Koreans prefer to use red pepper flakes.
This salad tastes great by itself and is often served as appetizer.

19 September 2017a great melange of longitudinally cut crunchy fresh premium carrots in a piquant but not too hot vinaigrette. Delicious!
