William Saurin Stew Duck 840g / Cassoulet Toulousain A la Graisse de Canard

William Saurin Cassoulet 840g is made with tasty smoked sausages, salami and tender pieces of duck, all accompanied by white beans simmered in a creamy tomato sauce.

Cassoulet was born during the siege of Castelnaudary during the Hundred Years' War. Hungry, the soldiers would have had the idea of cooking an enormous stew, called estofat, mixing dried beans and meat. It is said that this stew was the magic potion that liberated the city: a legend was born!

From the 17th century, housewives in the South-West France got into the habit of simmering pork fat, rind, sausages, pig trotters, etc. in the fireplace, which happily mixed with the beans for the greatest pleasure of their families.

The word “cassoulet” really appears in the 18th century and is called “caçolet” in Occitan. In the 19th century, a conflict arose: all the towns claimed the origin of cassoulet: Toulouse, Carcassonne, Castelnaudary, Narbonne, Pau, Montauban… Each offered its own recipe for this dish and all were as tasty as each other!
